As i said, the code starts after the line. so ignore all the CaPiTaLs before the _ line. Then after that, if you took out all the CAPITALS from that paragraph starting with 'would' and ending with 'instinct', you get UOYEVOLI.
Flip it, and you get ILOVEYOU

One of my favourite puzzles is the substitution cypher. In it, each letter is substituted for another letter. For example 'chicken is sweet' could become 'dijdlfo jt txffu', in which the 'key' to solving it is just the letter before it (e.g. D is actually C, I is H, etc)
